Differences between Baking Soda and Baking Powder

Baking soda (Sodium bicarbonate) is an alkaline compound that is a salt composed of a sodium cation and a bicarbonate anion. whereas, baking powder is a mixture of a carbonate or bicarbonate and a weak acid. it is a dry chemical leavening agent. the main Difference between Baking Soda and Baking Powder is that baking soda is a pure sodium carbonate powder that contains only sodium bicarbonates. on the other hand, Baking Powder is a mixture of sodium bicarbonate and an acidifying agent with a drying agent. Baking Powder contains sodium carbonate, an acidifying agent such as cream of tartar, and a drying agent such as corn starch.

Differences between Baking Soda and Baking Powder in tabular Form

baking soda is made with only one ingredient which is Sodium Bicarbonate. on the other hand, baking powder is made with many ingredients like acid salts and Bicarbonates. these bicarbonates are known as baking soda.
Monocalcium Phosphate does not present in them. Monocalcium Phosphate is present in them which reacts with NaHCO3 during heated and wetted.
acids easily react with it. acids do not react with it.
it is a Short leavening process. it is an extended leavening process that is helped by the second acid.
we can make baking products by using baking soda. they are not fluffy as compared to products that are made with baking powder because it is a short reaction process. the products that are made with baking powder are fluffy.

What is baking soda?

Baking soda known as sodium bicarbonate (NaHCO3) requires acid and a liquid to become activated and help baked goods rise. baking soda is a sodium salt that comprises a sodium cation that can be represented Naand bicarbonate anion can be represented as HCO3.

Baking soda only needs a liquid to become activated. Baking soda is a white solid that is crystalline. Baking soda does not contain Monocalcium Phosphate. Baking soda is primarily used as a leavening or raising agent in cooking.it acts as a leaving agent as it is capable of releasing carbon dioxide into the dough.

What is baking powder?

Baking powder is also used as a dry chemical leavening agent is a mixture of carbonate and a weak acid. Dry chemical leavening agents give the rising of dough or batter because they help in releasing carbon dioxide gas in the mixture. we need a base and an acid in the mixture to do so.

Acid and base are supplied together in baking powder. Monocalcium Phosphate is present in them which reacts with NaHCO3 during heated and wetted. it is an extended leavening process that is helped by the second acid. Basically, it is a mixture of a base, an acid, and a buffer or stabler. Baking powder is specifically designed for baking/cooking.
